Please join us Saturday evening, April 5, 2014 beginning at 6:30pm for a wild game wine pairing dinner with wine consultant, Brian DeMarke. We will be pairing eight wines with dinner for $42 per person plus tax and gratuity. The pairing of old world wines with wild game should be an interesting and enjoyable evening.

The dinner will consist of:

Welcome

NV Kila Cava, Spain

A blend of 25% Macabeu, 50% Xarello and 25% Parellada. A lovely entry-level Cava with a pleasant bouquet and a fresh green apple and orange peel tinged palate that is crisp and lively.

Cream quail over herb biscuit

2012 Chateau Haut Naudeau Entre-Deux- Mers, white Bordeaux, France

Dry white Bordeaux offers a complex aroma of flint and other minerals, finishing with a bracing acidity that brings everything into balance.

…………………………………………………………………………………………………………………….

Caesar salad with slow roasted pheasant

2010 Domaine Henri Delagrange Hautes Cotes de Beaune Bourgungne, France

The wine is purple with touches of violet, aromas of morello cherry, raspberry, crushed strawberry and violet with an endearing spontaneity. It is a wine for pleasure, gourmand, with round, silky and elegant tannin and structure.

…………………………………………………………………………………………………………………….

Local walleye over wild mushroom crema

2010 La Coterie cotes du Rhône villages, Seguret, France

This mouth filling red displays unctuous plum and boysenberry fruit flavors that course along nicely, thanks to lively spice and toasted anise notes, with a strong graphite steak. Fleshy, but excellent acidity is well-embedded on the finish.

Duck confit with wilted spinach

2010 Chevalier Du Grand Loc Cotes de Duras, France

Cabernet Sauvignon, Merlot, Cabernet Franc

Fresh and fruity with soft tannins. Attack silky fruity with notes of cherries and strawberries.

Braised rabbit quarter over vegetable ragout

2013 Honoro Vera Garnacha, Calatayud, Spain

Ripe cherry colors with garnet hues, the nose bursts with predominantly ripe fruit aromas, a fund with mineral aromas and spicy. The palate is presented with bright fruit flavors, fresh and easy to drink.

2011 Monchiero Barbera d’Alba, DDOC, Italy

Ruby red color. Intense fresh red berry and blackberry aroma. Rich flavors of dark berries and nutty oak with a hint of vanilla. The finish is fruity, lush and smooth.
