Special Tuesday Night Tasting with Adam Fox of Canard Vineyards

Canard Vineyard has been quietly producing small production, hand crafted wines for over thirty years. Each year we produce eight unique estate wines: Coucher de Soleil Rosé, Zinfandel, Cabernet Sauvignon, Throwback, Adam’s Blend, The Rescuer, our Reserve Zinfandel and our Reserve Cabernet Sauvignon. All of our wines are produced from estate grown grapes which are skillfully transformed into the finest expression of each varietal. We are dedicated to creating wines of distinction with an emphasis on quality over quantity.

Situated on the Northwest corner of Dunaweal Lane and the Silverado Trail in Calistoga, the twenty-five acre property is considered a historic vineyard in Napa Valley. The property was the original homestead of Captain Reason P. Tucker, who gained notoriety for leading the efforts to rescue the survivors of the ill fated Donnor Party. The residence at Canard was built in 1859 and quickly became the center of social activity in the area during the late 1800’s. Zinfandel was planted over 120 years ago and remarkably those dry farmed vines still stand, yielding a small quantity of incredibly elegant fruit which goes into our highly coveted Reserve Zinfandel. Over the years, Merlot, Cabernet Franc, Petit Verdot and of course our Cabernet Sauvignon were planted and have been meticulously cared for using painstaking but extremely effective vineyard practices. Creating wine at this level demands a great deal of discernment and sacrifice and most of it takes place in the vineyard. The result is the culmination of what man and nature can do when they work together in harmony.


2012 Canard Vineyards, Cabernet Sauvignon, Napa, California paired with cheese and spinach mushrooms

From our dry farmed estate vines, this full bodied, deep garnet Cabernet Sauvignon is dense and rich with long soft tannins and a smooth integrated structure. Less water and a greater skin to flesh ratio equals more intense fruit on palate. Shows black and red fruits, a touch of chocolate and notes of Christmas spice on the nose. The palate is rich with blackberry pie, figs, smoked meats and hints of sage brush. 333 case production

2012 Canard Vineyards, Zinfandel, Napa, California paired with a spicy sausage cheese pastry

From one of the oldest Zinfandel vineyards in Napa Valley. Not your typical Zin. This wine is structured, balanced and incredibly elegant. On the nose and upon entry, the wine is a seamless transition of rich, ripe raspberry, cedar, exotic spices and a hint of sage brush. The mid-palate is full bodied with a luscious mouth feel of ripe red cherries and sweet black plums. The finish is long and soft with hints of vanilla bean, coriander and campfire smoke. 265 case production.

2012 Canard Vineyards, Throwback, Napa, California paired with meatballs in a savory mushroom sauce

91% Cabernet Sauvignon, 6% Merlot, 3% Cabernet Franc
Cabernet Sauvignon as the base to this Left Bank styled wine, the addition of Merlot and Cabernet Franc creates layers of complexities and adds more mouthfeel (one of the great characteristics  of Merlot) and perfume of violets (thanks to Cabernet Franc) to the nose. This wine shows great backbone and structure with hints of black fruit, plum, sage and cedar smoke. The fine grained tannins will give this wine years in the cellar but it is already drinking beautifully.

2012 Canard Vineyards, Adams Blend, Napa, California paired with beef brisket and cremini mushrooms with horseradish sauce

91% Cabernet Franc, 5% Merlot, 4% Cabernet Sauvignon
Rich and medium bodied with long soft tannins. Perfumed nose with hints of strawberry jam, red plums and violets. A smooth delicate entry yields to great structure and a long finish of ground rose buds, cocoa, rhubarb, sweet cranberries and cherries. Aged in French oak to create a long-term, age worthy blend.

2012 Canard Vineyards, Rescuer, Napa, California paired with extra rich chocolate brownie

90% Merlot, 8% Cabernet Sauvignon, 2% Cabernet Franc
Extremely limited production estate blend is a soft, yet dense expression of three very elegant varietals, but with Merlot as the showcase. It shows star anise, crushed clove, dried sage and black cherry on the nose. Ultra fat mid palate yields to a silky smooth finish of cinnamon toast, dark chocolate, fresh black berries and cherries that will stay with you for a long time.
