In 2001, Don Sebastiani and his two sons, Donny and August, established Don Sebastiani & Sons. Today the company is led by Donny Sebastiani, great–grandson of Samuele the Sebastiani patriarch. “The plan is to continue the progress that previous generations in my family have made,” says Donny. “I want to have a similar impact on the wine industry. These wines, which include B Side, Aquinas, Don & Sons, The Crusher and Project Paso, are sourced from specific wine-growing regions such as Napa Valley, Sonoma Coast, Clarksburg and Paso Robles. 2014 Simple Life Chardonnay, California
paired with Cucumber Caprese Salad with Balsamic reduction sauce
Wonderful balance between bright notes of lemon and orange peel along with largely aromatic notes of papaya and nectarine. Rich in pineapple and lemon tart flavors yet crisp and elegant. Malolactic fermentation adds a roundness to the mouthfeel but the brilliant acidity persists and leaves a nice finish.
2014 Simple Life Pinot Noir, California
paired with Salmon cakes with mushroom cream sauce
Garnet in color, aromas of luscious cherries, nutmeg and savory herbs bring the wine to life. Bright flavors of cranberry and ripe plum intermingle with sage and warm baking spices. Notes of vanilla from 100% French oak aging provide a lovely background for the complex and supple tannins. This wine has perfect balance between its dark fruit character and lively acidity.
2013 Sivas-Sonoma Old Vine Zinfandel, Sonoma County
paired with blackberry BBQ Brisket sliders
Aromas of blackberry, dried fig, white pepper and cinnamon bark. Scents of nutmeg and warm spices are woven together with layers of dark black fruit flavors, black strap molasses, Mexican chocolate and pomegranate reduction. A hint of dill and black pepper on the palate are rounded out by bold vanilla from American oak aging. The 12% Petite Sirah adds rich color, depth of flavor and a tannic backbone to create a wine with wonderful structure and intensity. Bright acidity complements this vibrant, medium-plus bodied Zinfandel.
2012 Sivas-Sonoma Cabernet Sauvignon, Sonoma County
paired with Spicy BBQ Pork Shoulder sliders
Aromas of blackberry cobbler, mission fig, sorghum molasses and a touch of cigar box. It unfolds with ripe flavors of blackberry, black plum and black cherry coupled with cocoa and dusty cedar notes. Extended aging in both French and American oak lends subtle hints of vanilla and cardamom. Ripe, velvety tannins are smooth across the mid-palate leading to a pleasant, lingering finish.
2014 Custard ‘Comfort Wine’ Chardonnay, Sonoma Valley
paired with vanilla curd puff pastry and dark chocolate
Plenty of buttery, warm croissant notes with vibrant aromas of apricot jelly and vanilla complemented by a hint of toasted almond. Fresh pear and apple flavors take center stage while flavors of brioche round out this full-bodied creamy Chardonnay.
