2012 Domaine de Pajot, Les Quatre Cepages, vin Blanc de Payes Cotes de Gascogne
Colombard, Ugni-Blanc, Sauvignon, and Gros-Manseng
A pleasant rush of citrus and melon carried atop a vibrant beam of ripe acidity. The domaine is 100% certified organic and has been family owned for three generations. This clean, refreshing effort is a natural with goat cheeses, and would make an excellent companion for seafood of all types.
2010 Chateau Mourgues du Gres, Terre de Feu, AOC Costieres de Nimes, France
Genache and syrah
This cuvée is a recent addition to our Reserve range that was created in 2003 in response to an exceptionally unique vintage. Supreme expression of Grenache with a handle of Syrah, this wine very much justifies its name: “Terre de Feu” (Land of Fire). Evoking wonderful flavours of wild raspberries, Terre de Feu perfectly matches dishes that are slightly sweet and savory.

Ripe black cherries mingle with traditional dark red fruits, smoky oak and exquisite spices. This wine is complex. Its flavors will linger and yet it is crisp, surprisingly fresh and easy to drink. Drink it now, but it will taste great for many months to come
2011 Bayonette Cotes du Roussillon Villages, France
Grenache, carignan, syrah
Bayonette is a wine of bright crimson that is tempered by a slight opaqueness that speaks of texture and richness. Fresh-cut flowers are punctuated by the crack of black pepper as aromas are abundant. As the wine hits the palate it is raspberry jam, incense, and tobacco with a clean, satisfying and long finish.
